Pav bhaji masala

Pav Bhaji is a famous North Indian street food. It has loads of vegetables in it which makes it more healthy and tasty. 

You can use store bought pav buns or home made buns for this recipe.

In this recipe, I have used carrot, beans, green peas and potato for making masala. You can use any vegetables like cauliflower, capsicum, corn for making this recipe. Now, lets see how to make bhaji masala for pav.

Ingredients:
Servings: 6
Cooking time: 30 mins
1. Oil - 2 tbsp
2. Butter - as required 
3. Carrot (finely chopped) - 1 cup
4. Green beans (finely chopped) - 1/2 cup
5. Green peas - 1/2 cup
6. Onion (finely chopped) - 1
7. Tomato (finely chopped) - 1
8. Coriander leaves ( chopped) - 3 tbsp
9. Potato (boiled and mashed) - 1
10. Red chilli powder - 1&1/2 tsp
11. Salt - as required
12. Pav bhaji masala - 1&1/2 tbsp
13. Cumin powder - 1 tsp
14. Garam masala - 1 tsp
15. Coriander powder -  1/2 tsp

Method of preparation:
1. In a pressure cooker, take oil and add onion.
2. Cook until the onion becomes translucent and add tomato.
3. Cook until the tomatoes are mushy.
4. Add in all the chopped vegetables and mashed potatoes. 
5. Add chilli powder, Pav bhaji masala powder, garam masala, cumin powder, salt and coriander powder. Mix everything together.
6. Add about 1&1/2 cup of water and mix everything until its well combined.
7. Add coriander leaves and keep for 2 visils. 
8. Once the pressure releases, open the cooker and mash everything using a masher .
9. Add a blob of butter and mix everything together.
10. Now the masala is ready.
11. In a tawa, add a blob of butter.
12. Cut the pav buns horizontally and put it on the tawa.
13. Flip on both sides and cook until its toasted well.
14. In a serving plate, take toasted pav buns, masala, dices onion, coriander leaves with a slice of lemon.
