Tomato sambar for Dosa

This sambar recipe is one of my native recipes. We used to make this almost every week for breakfast or dinner. It makes a perfect combination with egg dosa.

Ingredients:
For grinding:
1. Tomato ( chopped ) - 2
2. Coconut ( grated ) - 1/4 cup
3. Roasted gram dal - 3 tbsp
4. Rice - 1 tsp
5. Chana dal - 1 tsp
6. Coriander seeds - 1 tsp
7. Pepper corns - 1/2 tsp
8. Fennel seeds - 1/2 tsp
9. Cumin seeds -1/2 tsp
10. Urad dal -1/2 tsp
11. Dried Red chilly - 6 no.
12. Onion ( chopped ) - 1/3 cup
13. Ginger - 1 inch
14. Garlic - 4 cloves
15. Cinnamon stick - 1/4 inch
16. Cloves - 3 no.
17. Curry leaves - 5 leaves
18. Coriander leaves ( chopped ) - 1 tbsp
19. Oil
For sambar:
1. Oil 
2. Mustard seeds - 1/2 tsp
3. Urad dal - 1/2 tsp
4. Chana dal - 1/2 tsp
5. Curry leaves  - 5
6. Coriander leaves ( chopped ) - 1 tbsp
7. Turmeric powder - 1/4 tsp
8. Salt - as required

Method of preparation :

1. In a pan add a tbsp of oil and rice. Wait till the rice puffed up nicely.
2. Add chana dal, coriander seeds and pepper corns. Saute until it becomes golden yellow.
3. Add remaining masalas except coconut and roasted gram dal. Saute for 2 mins.
4. Add coconut and saute for 2 minutes or until it becomes dry.
5. Add roasted gram dal ( pottukadalai ) and mix it. Mix everything together and transfer it to a plate.
6. In the same pan add oil and tomato. 
7. Cook until the tomatoes are mushy.
8. In a mixer grind the masalas with coarse texture. In the same mixer add sautéed tomatoes and grind along with the masala. 
9. In a deep pan, add oil and tempering ingredients (mustard seeds, Urad dal, Chana dal). Sauté till the mustard seeds splutters and dal becomes golden color. 
10. Add onion, curry leaves and coriander leaves and sauté for 2 mins.
11. Add grinded masala and add 4 cups of water(The masala should be very watery).
12. Add turmeric powder and salt. Mix it.
13. You can see the sambar becomes frothy. Keep mixing between and keep the flame in low-medium.
14. Turn off once you see the oil comes out and you reached the required consistency.
