Simple and healthy oats cookie

Cookie is one of the most favourite snack for kids and adults. Some people like it to be moist and chewy and some people like it to be crunchy. Now I am going to share a healthy cookie recipe which has oats and coconut oil in it.

Ingredients:

Preparation time : 10 mins
Baking time : 10 mins
Resting time : 10 mins


1. Oats - 1 cup
2. All purpose flour (maida) - 1/4 cup 
3. Wheat flour - 1/4 cup
4. Coconut oil - 1/4 cup
5. Egg - 1 
6. Raisins - 1/3 cup
7. Chocolate chips(optional) - 1/3 cup 
8. Salt - 1/4 tsp
9. Baking powder - 1 tsp
10. Maple syrup - 1/3 cup
11. Cinnamon powder - 1/4 tsp

Method of preparation:
1. In a bowl take oats, wheat flour, all purpose flour(maida), baking powder, cinnamon powder, salt. Mix everything together.
2. In another bowl take maple syrup, oil, vanilla essence and egg. Mix everything until it is well combined. 
3. Add the dry ingredients to this bowl.

4. Add raisins and chocolate chips. Mix everything using a spatula until it is mixed well . 

5. Line a baking tray with parchment paper or silicone baking sheet or foil. 
6. Scoop the cookie mixture and drop it on the tray. Flatten each cookie about 3/4" thick (you can use the back of the spoon to level the cookies) .
7. Preheat the oven for 350 degree Fahrenheit. 
8. Bake the cookies for 10 minutes or until the cookies are done.(you can check by looking at the bottom of the cookie).
9. Rest for 10 - 15 mins. 

Notes:
1. You can use wheat flour fully for the healthier option but the cookie will be denser than this.
2. You can replace coconut oil with butter.
3. You can replace maple syrup(1/3 cup) with honey(1/4 cup).
4. You can take any nuts or dried fruits of your choice in the place of raisins and chocolate chips
