Tutti frutti cake with no egg and no butter

 This cake is my favourite snack in my childhood which has colorful tutti fruttis in it. It is best to serve with tea as an evening snack. 

Ingredients:
1. All purpose flour (maida) - 1&1/2 cup
2. Powdered sugar - 3/4 cup
3. Curd - 1 cup
4. Coconut oil - 1/2 cup 
5. Baking powder -1&1/4 tsp
6. Baking soda - 1/2 tsp
7. Vanilla essence (essence of your choice) - 1/2 tsp
8. Tutti frutti - 1/3 cup
9. Raisins - 2 tbsp
10. Salt - a pinch

Method of preparation:
1. Take tutti fruttis and add 1 tbsp of maida to it.
2. Add raisins and mix well until its coated well.
3. In a large bowl, take curd, powdered sugar. Mix well until the powdered sugar dissolved completely in the curd.
4. Add baking powder, baking soda. Mix well until it becomes frothy.
5. Add vanilla essence or essence of your choice, coconut oil or any flavorless oil.
6. Gently mix it.
7. Keep the sieve on top and add all purpose flour or maida and salt. Sieve and mix gently using whisk.
8. After mixing gently, fold the batter in cut and fold method using saptula.
9. Now the flour and wet ingredients combined well without any lumps.
10. Add the tutti frutti and raisin mix in it saving about a tbsp for the topping.
11. Transfer the batter to baking tray greased with butter or lined with parchment paper or butter paper in it.
12. Level it using the spatula.
13. Top the batter with the remaing tutti fruttis and raisin. Gently press it using the spatula.
14. Tap two three times so that the air bubbles if present will release out.
15. Preheat the oven to 180 degree Celsius or 350 degree Fahrenheit for 15 mins.
16. Keep the tray in the preheated oven and bake for 50-55 mins. Insert the toothpick and see if the stick comes out clean. 
17. Rest for 15-20 mins and take the cake out from the tray.

18. Slice and serve with hot cup of tea!!!
