Vegetable egg toast

Egg toast is one of the simplest breakfast recipe. Vegetable added egg toast is another variation with lot of vegetables in it. It is an easy way to mothers out there to make their kids eat veggies.

It tastes yummy with a simple tomato ketchup or mayonnaise or even without anything.

Ingredients:
1. Bread slices - 4
2. Eggs - 4
3. Carrots ( chopped ) - 1/2 cup
4. Beans (chopped ) - 1/2 cup
5. Capsicum ( chopped ) - 1/2 cup
6. Onion ( chopped ) - 1/2 cup
7. Garlic ( chopped ) - 2 cloves
8. Green chillies (chopped ) - 2
9. Mozzarella cheese ( shredded ) - 4 tbsp
10. Cheddar cheese ( shredded ) - 4 tbsp
11. Cabbage ( chopped ) - 1 cup
12. Salt - as required
13. Pepper powder - as required
Method of preparation:
1. In a sauté pan add oil, garlic, green chillies. Sauté for one min.
2. Add onion. Sauté for a minute.
3. Add all the vegetables except capsicum. 
4. Add salt and pepper. Mix it and cook for 5 minutes or until all the veggies cook.
5. Add capsicum. Mix it and cook for a min.
6. In a cup add two eggs, vegetable mixture ( as much as you required ), cheese. Beat everything using a fork until frothy and pour it on a plate.
7. Dip a slice of bread in it and put it on a greased tawa on the stove.
8. Press gently and cook on both sides. 
9. Healthy vegetable egg toast is ready!!
