Mixed vegetables stir fry | Kadhamba poriyal

This recipe is one of the default recipe in South Indian functions. It is the easiest side dish and it goes well with elai sapadu. 

Ingredients:
Servings : 3
Cooking time : 10 mins
1. Oil - 1 tbsp
2. Mustard seeds - 1/2 tsp
3. Urad dal - 1/2 tsp
4. Chana dal - 1/2 tsp
5. Onion ( chopped ) - 1/4 cup
6. Carrot ( chopped ) - 1/2 cup
7. Beans ( chopped ) - 1/2 cup
8. Cabbage ( chopped ) - 1/2 cup
9. Coconut ( grated ) - 2 tbsp
10. Salt - as required
11. Chilli powder - 1 tsp
Method of preparation:
1. In a pan add oil and add tempering ingredients ( mustard seeds, urad dal and chana dal ).
2. Wait until the mustard seeds splutters and dal becomes golden color.
3. Add onion and give a mix. Cook for a min/
4. Add all the veggies to it.
5. Add chilli powder and salt. Give a good mix and cook for 5 mins. The veggies will start releasing water and cook.
6. Once the veggies and cooked well and the raw smell of chilli powder goes off, add coconut and mix it.
The tasty mixed veggies stir fry is ready to serve!!
