Potato stir fry | potato poriyal

Potato stir fry is one of the famous recipe in our day to day life. It is served along with white rice and some gravy.

Ingredients:
1. Oil - 2 tbsp
2. Mustard seeds - 1/2 tsp
3. Urad dal - 1/2 tsp
4. Chana dal - 1/2 tsp
5. Onion (chopped) - 1/4 cup
6. Curry leaves - few
7. Tamarind water - 1 tbsp
8. Curry masala - 1/2 tsp
9. Asafoetida (hing) - 1 pinch
10. Boiled potato - 3
11. Chiili powder - 1/2 tsp
12. Turmeric powder - 1/4 tsp
13. Salt - as required
14. Coconut (grated) - 2 tbsp
15. Coriander leaves (chopped) - few

Method of preparation:
1. Mash boiled potato lightly and add powdered masalas(turmeric powder, Chilli powder, curry masala, salt) to it.
2. Add tamarind water to it.
3. Mix everything together.
4. Heat a pan and add oil to it.
5. Add tempering ingredients( mustard seeds, urad dal, chana dal) and hing.
6. Add onion, coriander leaves and curry leaves
7. Let the onion cook completely and add potato mix to it.
8. Gently mix everything together and cook until the raw smell of masalas goes off. There is no need to add water but if you find it very dry, just sprinkle some water and allow to cook.
9. Add coconut, mix well and serve!!

Notes:
1. Instead of adding tamarind water, you can also add tomato to this recipe. But you have to add tomato to the onion while sautéing.
