Coriander chutney

Coriander chutney is full of freshness and it is perfect for any day's breakfast or dinner. It makes the best side dish with hot steaming idli.

Ingredients:
1. Oil - 1 tbsp
2. Urad dal - 1/2 tsp
3. Tamarind - a pinch
4. Chana dal - 1/4 tsp
5. Ginger - 1/4 tsp
6. Green chillies - 2
7. Garlic (chopped) - 1 tbsp
8. Coconut (grated) - 1/4 cup
9. Roasted gram dal (pottukadalai) - 2 tbsp
10. Salt - as required
11. Coriander leaves - a bunch

For tempering:
12. Oil - 1 tbsp
13. Mustard seeds - 1/2 tsp
14. Urad dal - 1/4 tsp
15. Chana dal - 1/4 tsp
16. Curry leaves - few leaves

Method of preparation:

1. In a pan, add oil, urad dal and chana dal. Fry until it becomes golden color.
2. Add onion, garlic, ginger, green chillies and tamarind.
 
3. Add coriander leaves and sauté until it becomes soft. Let it cool down completely.

4. In a mixer, take grated coconut and roasted chana dal.

5. Transfer the sautéed items to the mixer and add salt.

6. Add required water and grind it to a paste.

7. In a pan, take oil. Add tempering ingredients(mustard seeds, urad dal, chana dal). Fry until it becomes golden color.
8. Add curry leaves and sauté till it becomes crispy. Add it to the chutney!!!
