Mysore pak | gram flour cake

 Mysorepak is a desert / sweet recipe made by using ghee. This sweet is originated in Mysuru, one of the cities in the state of Karnataka, India. It has soft and buttery texture to it which will melt in your mouth once you have a bite.

Ingredients:

Servings: 30 pieces
Time taken : 30 mins
1. Gram flour (besan) - 1 cup
2. Sugar - 1&1/2 cups
3. Milk - 1 tbsp
4. Ghee - 1&1/2 cups

( Apply ghee to a mould and keep it ready before starting to make mysore pak)
Method of preparation:
1. Take a nonstick or iron pan and add sugar to it. 
2. Add water until the sugar immerses completely.
3. Start boiling the pan and let the sugar dissolves completely.
4. Once it starts bubbling, add milk. The dirt from the sugar starts coming out after adding milk to it. 
5. Filter the dirt using a strainer and continue boiling the sugar syrup.
6. After few mins, you can see one string consistency in the sugar syrup.
7. Once you see one string consistency, add flour to it and start stirring.
8. Mix continuously so that there is no lumps in the flour.
9. Start adding ghee one ladle at a time.
10. After adding one ladle ghee, start mixing so that the flour absorbs the ghee completely.
11. Once all the ghee absorbed by the flour, add another ladle of ghee.
12. Mix the flour without any break. Otherwise it will start stick at the bottom of the pan.
13. Add ghee again. 
14. After adding around 1&1/4 cup of ghee, check you can make a ball out of the mixture.
15. Take a little bit of flour mixture from the spatula and start rolling.
16. If the flour holds a ball shape, add the remaining ghee to it and switch off the stove. 
17. Give a quick and good stir and take it off the heat.
18. Pour the mixture in a ghee applied mould.
19. Level the mysore pak using the back of the spatula .
20. After two mins, take a ghee greased knife and cut into pieces.
21. Allow to cool for some time and take the pieces gently form the tray.
