Green vermicelli pulao

Green vermicelli pulao is a breakfast recipe with freshness of coriander leaves and mint leaves in it. It can be served with a simple curd as its side.

Ingredients:

Servings : 2
1. Vermicelli - 1 cup
2. Oil - 5 tbsp
3. Cloves - 3
4. Cardamom - 2
5. Bay leaf - 1 small
6. Star anise - 1/4 
7. Onion (chopped) - 1/2 cup
8. Coriander leaves - 1/2 cup
9. Mint leaves - 1/4 cup
10. Tomato (chopped) - 1 small
11. Garlic (chopped) - 2 cloves
12. Ginger (chopped) - 1 tbsp
13. Green chillies (chopped) - 2
14. Carrot (chopped) - 1/4 cup
15. Beans (chopped) - 1/4 cup
16. Green peas (chopped) - 1/4 cup
17. Turmeric powder - 1/8 tsp
18. Water - 3 cups
19. Salt - as required

Method of preparation:
1. In a mixer, take coriander and mint leaves.
3. Add garlic, ginger. tomato.
4. Add little water and make it to a smooth paste.
5. In a pan, boil 3 cups of water and add salt and a tbsp of oil.
6. Add vermicelli and boil for 3 minutes.
7. Strain the water and keep the vermicelli separately.
8. In a pan, take oil and add cloves, cardamom, star anise and bay leaf.
9. Sauté for 2 minutes and add onion. Fry until the onion becomes golden. 
10. Add all the veggies and little salt. Boil until the vegetables are cooked enough.
11. Add grinded paste.
12. Add turmeric powder. Mix everything together. If its so dry, sprinkle some water.
13. Add strained vermicelli to it.
14. Mix well and close the pan. Let it simmer for 2-3 mins.
15. Now the vermicelli pulao is ready to serve!!
