Mutton keema | Mutton kothukari

 Kothukari is a minced meat used in various recipes like briyani, dosa and even plain rice.

Ingredients:
1. Oil - 5 tbsp
2. Mustard seeds - 1/2 tsp
3. Urad dal - 1/2 tsp
4. Chana dal - 1/2 tsp
5. Shallots (chopped) - 1 cup 
6. Curry leaves (chopped) - few
7. Vadagam (optional) - a pinch
8. Minced mutton - 500 gms
9. Turmeric powder - 1/4 tsp
10. Chilli powder - 1/2 tsp
11. Curry masala - 1/2 tsp
12. Salt - as required
13. Roasted gram flour (pottukadalai) - 2 tsp
14. Ginger garlic paste - 1 tsp
15. Kashmiri chilli powder - 1 tsp
16. Castor oil - 4 drops
17. Grated coconut - 2 tbsp
18. Coriander leaves (chopped) - few

Method of preparation:
1. In a kadai take oil and tempering ingredients (mustard seeds, urad dal, chana dal).
2. Add onion and curry leaves.  
3. Add vadagam (this is optional, its basically sundried onion with spices) and ginger garlic paste.
4. Mix everything together and cook until onion becomes transparent.
5. Add minced meat.
6. Add castor oil and turmeric powder.
7. Mix everything together until the meat leaves water and add powdered masalas( turmeric powder, chilli powder, kashmiri chilli powder, curry masala and salt).
8. Mix well and cook for five mins.
9. Transfer it to the pressure cooker and keep for 4 visils. (if you dont have cooker just cook it in the kadai itself. but cook until the meat cooks completely)
10. Release the pressure and check whether the meat is cooked well.
11. Transfer it to the kadai and add roasted gram dal to it.
12. Cook for 5 mins and add grated coconut and coriander leaves.
13. Allow to cook until the oil comes out and it reaches the required consistency.
