Drumstick sambar | Murungakkai sambar

Drumstick sambar is one of the staple food in South Indian recipes. It is made with toor dal and drumstick added with spices to it.
This gravy goes well with a simple potato stir fry.
Ingredients:
1. Toor dal - 5 tbsp
2. Onion (chopped) - 1/4 cup
3. Tomato (chopped) - 1
4. Curry leaves - few
5. Coriander leaves (chopped) - few
6. Cumin seeds - 1 tbsp
7. Vadagam (optional) - 1 tbsp
8. Tamarind - small lemon size
9.  Castor oil - 4 to 5 drops
10. Turmeric powder - 1/4 tsp
11. Chilli powder - 1/2 tsp
12. Salt - as required
13. Oil - 3 tbsp
14. Mustard seeds - 1/2 tsp
15. Chana dal - 1/4 tsp
16. Urad dal - 1/4 tsp


Vadagam is grinded onion with spices in it. We used to make this every  year when there is shallot season and sun dry it. It enhances the flavor to the recipes. 
 
Soak the tamarind in water and extract the water out of it.
Method of preparation:
1. In a pressure cooker, take dal and add water. For 5 tbsp of dal, add about 1 cup of water.
2. Add turmeric powder.
3. Add few drops of castor oil. Mix everything and cook until the dal is cooked well. 
4. Add onion, tomato, coriander leaves, curry leaves, vadagam, cumin seeds and drumstick.
5. Add chilli powder and salt.
6. Add hing(asafoetida powder) and cooking oil 1 tsp.
7. Mix everything and keep for one visil.
8. Take tamarind extract in a bowl and transfer the cooked dal to it.
9. In a wide pan, take oil. Add mustard seeds, urad dal, chana dal, curry leaves, vadagam, hing.
10. Once the dal becomes golden color, add the tamarind mixture to it and boil for two minutes.
