Poori masala

 In the previous post, I shared you how to make soft poori. In this post I am going to share how to make the masala for poori. It is a potato based masala which goes well with poori and Mysore masala dosa.

Ingredients:
1. Oil - 5 tbsp
2. Mustard seeds - 1/2 tsp
3. Urad dal - 1/2 tsp
4. Chana dal - 1/2 tsp
5. Onion (chopped) - 2 large
6. Curry leaves - as required
7. Hing ( Asafoetida powder ) - a pinch
8. Ginger garlic paste - 1 tbsp
9. Tomato (chopped) - 1 
10. Potato - 4
11. Turmeric powder - 1/4 tsp
12. Green chillies (slit) - 3
13. Roasted gram dal powder - 2 tsp
14. Coriander leaves (chopped) - 2 tbsp
15. Salt - as required
Method of preparation :
1. In a pressure cooker take water, salt and potatoes.
2. Visil for 3-4 visils or until the potatoes are cooked completely.
3. Wait until the pressure is down and take the potatoes out.
4. Rest for a while and peal the skin and mash it roughly.
5. In the same cooker take oil. Add tempering ingredients (mustard seeds, urad dal, chana dal). Wait until the mustard seeds starts crackling and dal becomes golden yellow.
6. Add green chillies, curry leaves and hing (asafoetida powder).
7. Add onions, ginger garlic paste and turmeric powder. Mix everything together.
8. Add tomatoes and mashed potatoes. Mix it.
9. Mix roasted gam dal powder to the water and dissolve it. Add it to the masala and add salt.
10. Add chopped coriander leaves and add 1/4 cup water. Keep for a visil and wait until the pressure releases.
11. Open the cooker and cook until you reach the required consistency.
Notes:
1. You can also make this masala using kadai(pan) instead of using pressure cooker. But slice the onion thinly so that it will cook easily.
