Simple banana muffins

 A normal sized banana has low sodium and high potassium content in it. This combination helps to control the blood pressure. I have already shared you whole wheat banana recipe. And this is another recipe with ripe bananas. Hope you will give this try and enjoy!!

In this post I am going to share you a perfect breakfast banana muffin recipe.


Ingredients:

Servings : 30 mini muffins
Baking time : 12-15 mins
Preparation time: 10 mins  


1. Ripe bananas - 3

2. Wheat Flour - 3/4 cup 

3. All purpose flour - 3/4 cup

4. Coconut oil - 6 tbsp.

5. Sugar - 2/3 cup

6. Salt - 1/2 tsp

7. Milk - 2 tbsp.

8. Cinnamon powder - 1/2 tsp

9. Walnuts ( chopped ) - 1/4 cup

10. Egg - 1

11. Baking powder - 1 tsp

12. Vanilla essence - 1 tsp

13. Baking soda - 1 tsp

Method of preparation:

Dry ingredients:



1. Take wheat flour, all purpose flour in a bowl.

2. Add baking soda and baking powder in it. Mix everything together and keep aside.

Wet ingredients:



3. Take the peeled bananas in a bowl and mash it.

4. Add oil, egg to it and mix everything together until it is well combined.



5. Add milk, vanilla essence to it and mix it.

6. Add chopped walnuts to the wet ingredients.

7. Take a sieve and keep on the wet ingredients bowl. 

8. Sieve the dry ingredients little by little and add cinnamon powder to it.



9. Mix everything together until all the wet and dry ingredients are completely mixed together.

10. Preheat the oven for 425 degree Fahrenheit. 

11. Transfer the batter to the mini muffin tin and tap to remove any air bubbles.

12. Keep the tin in the oven and bake for 5 mins and reduce the temperature for 350 degrees and bake for 7-10 mins until the toothpick comes out clean when inserted in the center. (The total time to bake this muffins are 12- 15 mins).For a normal muffin holder it will take around 17-20 mins.

13. Take out the mini muffins and rest for 10 mins and done !!!

Notes:

1. If you don't like to add oil then you can always add butter in the place of oil. Just take 6 tbsp. of butter instead of oil.

2. If you want your muffin to be more spongy textured you can use all purpose flour fully instead of using wheat flour .
