Paneer kurchan

Paneer kurchan is a delicate side dish for naan bread, roti or even pulkha. It is basically paneer and capsicum based recipe which can be made as a gravy form or in a dry form.

Ingredients:
1. Paneer - 200 gms
2. Capsicum - 1 cup
3. Onion (chopped) - 1 large
4. Tomato (chopped) - 2 medium 
5. Cashews - 15 no.
6. Chilli powder - 1 tsp
7. Coriander powder - 1&1/2 tsp
8. Cumin powder - 1/2 tsp
9. Garam masala - 1 tsp
10. Kashmiri chilli powder - 1 tbsp
11. Turmeric powder - 1/4 tsp
12. Amchur powder - 1/2 tsp
13. Cumin seeds - 1 tsp
14. Garlic (chopped) - 1 tbsp
15. Ginger (chopped) - 1 tbsp
16. Bay leaf - 1
17. Kasoori methi - 1 tbsp
18. Salt - as required
19. Butter - 2 tbsp
20. Green chilly (chopped) - 2
 
Method of preparation:
1. In a pan, add tomatoes, cashews and a little salt. 
2. Cook until the tomatoes are mushy and rest for few minutes. Make it into a smooth paste.
3. In the pan, add butter, cumin seeds, garlic, ginger, green chillies, bay leaf. Sauté for 2 minutes,
4. Add onion and sauté until its golden.
5. Add capsicum and sauté until it sweats. There is no need to cook the capsicum fully.
6. Add pureed tomatoes.
7. Add coriander powder, cumin powder, amchur powder, turmeric powder, chilli powder and kashmiri chilli powder.
8. Mix everything together.
9. Add a little water and cook until the raw smell of the masalas goes off.
10. Add paneer cubes and mix gently.

11. Add garam masala and crushed kasoori methi leaves on the top.
12. Close and cook for two minutes.
13. Now the paneer kurchan is ready for serve!!
