Two way chicken cutlet

This chicken cutlet recipe is my go to starter recipe for any occasion. 

In this post, I am going to show you two versions to make the crust for it.

I baked these cutlets. But you can also try this by deep frying. 

Now let's see the recipe

Ingredients:
1. Minced chicken - 750 gms
2. Eggs - 2
3. Onion powder - 1/2 tsp
4. Chilli powder - 1 tsp
5. Garlic powder - 1/2 tsp
6. Chilli flakes - 1/2 tsp
7. Heavy cream - 2 tbsp
8. Salt - 1/2 tsp
9. Pepper powder - 1/2 tsp

For method 1:
10. All purpose flour (maida) - 1/2 cup
11. Bread crumbs - 1/4 cup
12. Salt - 1/2 tsp
13. Pepper powder - 1/2 tsp

For method 2:
10. Almond flour - 1/2 cup
11. Parmesan cheese - 1/4 cup
12. Salt - 1/2 tsp
13. Pepper powder - 1/2 tsp

Method of preparation:
1. Take minced chicken in a bowl and add chilli powder.
2. Add in all the powdered masalas( onion powder, garlic powder, chilli flakes, pepper powder and salt).
3. Mix everything together using a spoon and keep separately.
4. In another bowl, take two eggs. Add heavy cream and mix both using a fork.

5. Take breadcrumbs, maida, salt and pepper.

6. Mix everything together.

7. Take almond flour, parmesan cheese, salt and pepper. 

8. Mix well

9. Now we are ready to make our cutlets!!

Method 1:
10. Take a tbsp of chicken and flat like a mini burger. 
11. Dip in egg mixture and leave it in flour bowl.
12. To avoid mess use another hand, coat the chicken completely and keep it in the tray. (you can also double coat again by dipping it once more in egg mixture and flour mixture)

Method 2:
13. Take a tbsp of chicken and flat a little bit.
14. Coat the chicken in egg mixture and in breadcrumbs mixture.
15. Keep it in the tray.
16. Preheat the oven for 350 degree Fahrenheit. 
17. Keep the tray inside and bake for 30 minutes.
18. Rest for sometime and serve with any sauce of your choice!!!

Notes:
1. If you are going to fry this recipe, try making the coating twice. So that you will get a crispy outing on the top!!
2. To get more crispy cutlets from breadcrumbs, try baking the breadcrumbs alone in oven for 2 minutes at 350 degree Fahrenheit before starting the process.
