Sweet potato pancake

 In India, Sweet potato is steamed and consumed as a evening snack. It is even sliced and fried as snack chips.

In this post, I am going to share how to make pancakes using sweet potato.

Ingredients:

Servings: 7 pancakes
Time taken: 30 mins
1. Mashed sweet potato - 1 cup
2.All purpose flour (maida) - 1 cup
3. Baking powder - 2 tsp
4. Sugar - 1 tbsp
5. Salt - 1/4 tsp
6. Cinnamon powder - 1/2 tsp
7. Egg - 1
8. Milk - 1 cup
9. Butter (melted) - 2 tbsp

Method of preparation:
1. Take egg and separate yolk and white.
2. Beat the egg white until it becomes foamy using a whisk or hand mixer.
3. Beat the yolk until it becomes pale in color.
4. Fold yolk and white mixture gently until its combined(don't over mix it!!).
Wet ingredients:
5. Take mashed sweet potato and sugar in a bowl. 
6. Add milk little at a time and mix until it is combined well.
7. Add butter and whisk everything together.
Dry ingredients:
8. In a bowl, take flour, salt and baking powder.
9. Add cinnamon powder to it and give it a rough mix.
10. Add dry ingredients to the wet mixture and whisk it until there are no lumps.
11. Add the egg mixture to it and gently fold it.
12. Adjust the batter consistency using water.
13. In a hot tawa pour the batter and spread it thick.
14. Wait until you see batter start seeing holes on its top. Now the top begin to cook.
15. Flip the pancake and apply butter.
16. Flip it over and apply butter. Cook until both the sides are done.
17. Yummy and healthy sweet potato pancakes are ready to serve with homey or maple syrup on its top!!
