Simple Ridge gourd stir fry

 Ridge gourd stir fry tastes very good with white rice. 

Don't throw the ridge gourd skin. You can make another interesting recipe using the skin.

Ingredients:

1. Oil - 2 tbsp

2. Mustard seeds - 1/2 tsp

3. Urad dal - 1/4 tsp

4. Chana dal - 1/4 tsp

5. Onion (chopped) - 1/2 cup

6. Curry leaves - as required

7. Vadagam - pinch (optional)

8. Turmeric powder - 1/4 tsp

9. Chilli powder - 1/2 tsp

10. Castor oil - 4to5 drops

11. Salt -as required

12. Ridge gourd (peeled and chopped) - 1

Method of preparation:

1. In a pan, take oil. Add tempering ingredients( mustard seeds, urad dal, chana dal). Wait until the mustard seeds start crackling and dal becomes golden.
2. Add onion, curry leaves and vadagam.
3. Add ridge gourd and turmeric powder.
4. Add castor oil and chilli powder. Sauté until the raw smell goes off completely. Check if the ridge gourd is perfectly cooked by pressing it.
5. There is no need to add water at any time. But if its so dry and starts sticking to the bottom, you can add little water)
6. Add salt and mix it. Cook for two mins and serve!!

Notes:
1. Selection of ridge gourd is the most important thing in this recipe. If you press the outer surface, it has to feel soft.
