White sauce pasta

 All spaghetti is pasta but all pasta is not spaghetti. The white sauce is called béchamel sauce which is made by using butter, flour and milk. Sauce made with cheese is called alfredo sauce

In this post, I am going to share pasta recipe with white sauce which has oil, flour, milk and cheese. So it is a mix between alfredo and béchamel sauce.


 Ingredients:

1. Spaghetti - 500 gms
2. Olive oil - 6 tbsp.
3. Garlic ( chopped ) - 4 tbsp.
4. All purpose flour ( Maida ) - 2 tbsp.
5. Milk - 1 cup
6. Mushroom (chopped ) - 200 gms.
7. Chilli flakes - 2 tbsp.
8. Salt - as required
9. Pepper - 1/2 tsp
10. Parmesan cheese - 1/4 cup
11. Italian seasoning - 1 tbsp.
12. Fresh parsley ( chopped ) - 1 tbsp. 
Method of preparation:
1. Boil water in a pan and add salt and a tbsp. of oil in it( The water has to be really salty ).
2. Once the water is boiled very well, add pasta in it.
3. Boil the pasta as per the timing given in the package and drain it( Save about 1 cup of water for making sauce).  
4. In a pan add 5 tbsp. of oil and garlic. Sauté for a minute.
5. Add mushrooms, salt and 1 tbsp chilli flakes. Sauté for a minute. 
6. Cook the mushroom very well and transfer it to a plate. This will take 5 mins.
7. In the same pan add oil, flour and mix well for two mins. Keep the stove in low flame and mix well.
8. Add milk and combine with the flour mixture.
9. Pour the pasta water and mix until the raw smell goes off.
10. Once the consistency is creamy add 1 tbsp chilli flakes and Italian seasoning. Mix everything together.
11. Add cooked pasta and mix it.
12. Add parmesan cheese and mix well until the cheese combined well with pasta.
13. Add chopped parsley and pepper. Mix everything together and serve!!
Notes:
1. You can replace olive oil with butter.
