Vegetable spaghetti

Spaghetti is a staple food in Italian cuisine. It has its variation based on the sauce we make like tomato sauce, white sauce, etc.

In this post I am going to share you a vegetable incorporated spaghetti recipe with Indian twist.

Please try this recipe and give a treat to your taste buds!!!

Ingredients:
Cooking time : 30 mins
Servings : 5
1. Spaghetti - 300 gms
2. Carrot (chopped) - 1/2 cup
3. Beans (chopped) - 1/2 cup
4. Broccoli - 1/2 cup
5. Mushroom (chopped) - 1/2 cup
6. Large onion (chopped) - 1 
7. Garlic ( chopped) - 10 cloves
8. Salt - as required
9, pepper powder - 1/2 tsp
10. Chilli flakes - 1&1/2 tsp
11. Parmesan cheese ( grated ) - 1/4 cup
12. Cheddar cheese ( grated ) - 2 tbsp.
13. Soya sauce - 1 tbsp. 
14. Butter - 2 tbsp.
15. Olive oil - 3 tbsp.
16. Italian seasoning - 1 tbsp.

Method of preparation:


1. In a vessel boil the water, add salt and 1 tbsp. oil (the water has to be really salty like sea).
2. Add spaghetti once the water boiled completely and let it boil as per the cooking instructions timing (pls see the spaghetti box for the timing).
3. Once the spaghetti is cooked strain it and keep it separately (Preserve 1 cup of water for making sauce).

4. In a pan add butter and olive oil. Let the butter melt down. Add garlic and sauté for 1 min.
5. Add onions and sauté for 2 mins. Add all the veggies and stir for 2 mins.


6. Add salt, chilli flakes, Italian seasoning, soya sauce to it. And mix it till it is combined well.
7. Add 1 cup normal water or spaghetti boiled water if its so dry.
8. Add cooked spaghetti, parmesan cheese and cheddar cheese. Give a good mix.
9. At last add pepper powder to it. Give a mix and serve!!!!
