Vegetable & Egg fried rice

Fried rice has many variations for itself. It is basically a cooked rice tossing with other ingredients like egg, veggies, sea food, paneer, chicken or any other meat. 

Today I am here to share you a fried rice recipe with veggies and eggs in it. It tastes just yum with any Manchurian as its side or a simple tomato ketchup makes it perfect.

Ingredients:

Time taken to cook: 30 mins

1. Eggs - 3
2. Carrot (finely chopped) - 1 cup
3. Green beans (finely chopped) - 1 cup 
4. Cabbage (sliced thin) - 1 cup
5. Basmati rice (soak for 15 mins) - 2 cups
6. Pepper powder -2 tbsp 
7. Salt - as required
8. Spring onions - 10
9. Green chillies(finely chopped) - 2
10. Oil - 5 tbsp
11. Green chilli sauce - 1&1/2 tbsp
12. Soy sauce - 2 tbsp

Method of preparation:
1. Boil about 3 litres of water. 
2. Add 1 tbsp of salt, 1 tbsp oil to it. Let it boil very well.
3. Once the water completely add soaked rice to it.
4. Cook the rice until its 80% done. Strain the rice and keep it rest for sometime. 

5. In a wok pan or kadai add oil 3-4tbsp and add green chillies.
6. Add chopped veggies one by one and toss it. 
7. Add stem of the spring onions and toss it.

8. Add salt and cook the veggies for 5 mins.
9. Move the veggies around and in the center add little oil. Add three eggs, salt and pepper to it.
10. Slowly scramble the eggs in the middle and mix all the veggies to it. So that the eggs get sticked nicely to the veggies.
11. Add green chilli sauce and soya sauce to it and mix it .


12. Add cooked rice to the pan and gently mix everything. Don't mix very hard otherwise the rice will break down.
13. Once the rice completely mixed with the veg and egg mixture, add remaining spring onions and mix it.
