Mint rice | Lunch box recipe

Mint rice is a one of the perfect lunch box recipe with full of nutrition. Mint leaves are known for its freshness and flavor. 

This mint rice will make a perfect combination with a simple ladies finger pepper fry.

Ingredients:
1. Rice - 1 cup
2. Mint leaves - a bowl
3. Tomato (chopped) - 1
4. Green chillies (chopped) - 2
5. Mustard seeds - 1/2 tsp
6. Onion (chopped) - 1/4 cup
7. Curry leaves - few
8. Urad dal - 1/2 tsp
9. Chana dal - 1/2 tsp
10. Peanut - 1&1/2 tbsp
11. Dry red chilly - 2
12. Oil - 3 tbsp
13. Ghee - 1 tsp
14. Salt - as required
15. Ginger (chopped) - 1 tbsp

(Wash and soak rice for 15 mins and boil it. Strain and keep separately)
Method of preparation:
1. In a mixer, take mint leaves, tomato, ginger and green chillies.
2. Grind everything and make a smooth paste.
3. ( you don't need to add any water while grinding )

4. In a wide pan, take oil and add mustard seeds to it. Wait till the mustard seeds starts crackling and add onion, red chillies and curry leaves to it.
5. Add grinded masala to the pan and add salt. Mix everything and wait until the water from the mixture evaporates completely.
6. Add strained rice and ghee to it and mix everything together.
7. In a pan take oil, mustard seeds, chana dal, urad dal and peanuts. Sauté until it turns golden color and add to the rice. 
8. Garnish the rice using fresh mint leaves and mix well.


Notes:
1. Strain the rice and allow to rest completely before adding it to the pan.
