Coriander rice | Lunch box recipe

Coriander rice is one of the kids lunch box recipe. It is very easy to make and it has the freshness of coriander in it. It tastes wonderful with a simple potato fry.

Ingredients:
Cooking time :15 mins
Servings :2
1. Coriander leaves - 1 bunch
2. Green chillies - 3
3. Boiled white rice - 1 cup
4. Tomato ( chopped ) - 1
5. Ginger ( chopped ) - 1 inch 
6. Oil - 2 to 3 tbsp
7. Urad dal - 1/2 tsp
8. Chana dal - 1/2 tsp
9. Peanut - as required
10. Cashews ( splitted ) - as required
11. Salt - as required
12. Ghee - 1 tbsp
13. Mustard seeds - 1/2 tsp
14. Dry Red chillies - 2
Method of preparation:
1. In a mixer, add coriander leaves, green chillies, ginger and tomato. Make a smooth paste.
2. In a kadai, add oil. Let it splutter. Add grinded puree and cook until the water evaporates completely. 
3. Add salt and give a mix.
4. Add cooked white rice and gently mix everything together.
5. Take ghee, urad dal, chana dal, peanut, red chillies and cashews. Sauté until everything becomes golden brown.
6. Add it to the rice and mix gently.
7. Aromatic coriander rice is ready!!!!
Notes:
1. If you find that the gravy is more, take little bit out before adding rice to it.
